Melinda’s Gluten free goodies

I recently learned of Melinda’s Gluten-free Goodies when a friend made me Chocolate Fudge Brownie from one her premix range. It was moist, it was delicious, it was gluten free. Melinda has been kind enough to send me a Choc Walnut Recipe to share with you.

Ingredients
2 2/3 cups FG Roberts Gluten Free Self Raising flour
3 Tablespoons good quality cocoa.
1 ½ cups coconut
¾ cup caster sugar
¾ cup chopped walnuts
360gm butter
1 ½ T golden syrup
1 ½ t vanilla

Icing
3 cups pure icing sugar
3 Tablespoons cocoa
45 gm butter
3 T hot water
1 ½ t vanilla

Method
Sift dry ingredients into bowl. Melt butter, add golden syrup and vanilla and add to dry ingredients. Stir to combine. Press into LARGE size slice tin. Bake in 180 degrees for 35 minutes. When the slice is almost cool cover with icing*, set in fridge then cut.

*Combine all and spread over slice, enjoy with hot coffee or tea
